The Sugar Cube Story

The Sugar Cube is a sweet little bakery in the heart of the Alberta Arts District in Portland, Oregon that serves up some of the finest pastries and desserts the city has to offer.

Originally from Chicago, Kir is a first generation American born from two European parents, so her diet growing up was far from the Wonderbread sandwich variety. She first studied pastry at The Cooking and Hospitality Institute of Chicago. During her time there she scored a stage at the prestigious Trio in Evanston. Shortly after, a pastry cook position opened up and her career took off. She worked under the influential young pastry chef Della Gossett, who has mentored many aspiring pastry chefs.

Kir learned strong technique and inventive flavor combinations from her time at Trio where the food was creative and thoughtful, and well-balanced. Kir took that lesson to heart, creating a simpler version of an approach that focused on highlighting seasonal ingredients. After moving to Portland, she worked at Genoa, Clarklewis, and Florio Bakery. In 2008 she struck out on her own, purchasing an 8 x 14-foot food cart. Since opening The Sugar Cube, Kir has been featured in The New York Times, LA Times, and Travel & Leisure. She has a cookbook, 50 Deliciously Twisted Treats from the Sweetest Little Food Cart on the Planet by Chronicle Books.  In 2011 she won the StarChefs.com Portland Rising Star Pastry Chef award. In the beginning of 2013, Kir bid farewell to her beloved food cart and in September she opened her first brick and mortar bakery.

Mom’s Famous Coffee Mallow Pie

Lets buck tradition! This is one of my favorite pies that my mom made. A buttery crust brushed with dark bittersweet chocolate and filled high with coffee mallow mousse. Topped with grated milk chocolate and salted caramel, $31
